Twig Farm is owned by Michael Lee and Emily Sunderman. We started Twig Farm in 2005. Our fortyish-acre farm is located in West Cornwall, Vermont, about 10 miles south of Middlebury. Michael manages our herd of goats and makes and ages our cheese. He has two employees, Helen Cowan and Lauren Gitlin. Emily manages the accounting and the web site. We milk about 50 goats twice a day and make cheese 3-4 times a week. Our goats live outdoors and graze nearly all year. We serve up organic hay when there is nothing to eat outside. When in the milking parlor the goats get a bit of grain.
We make our cheese by hand using traditional techniques and equipment for farmstead cheese production. Our cheeses age in a temperature and humidity controlled enviornment in our cellar. Michael learned his craft mostly by doing. Prior to making Twig Farm cheese, Michael worked as an apprentice at Peaked Mountain Farm in Townsend, Vermont, and before that was a cheese manager at South End Formaggio in Boston, Massachusetts.
