Twig Farm Washed Rind cheese is a semi-soft mixed (cow & goat) washed rind cheese. The cow’s milk (from cows on pasture and dry hay) is from MoSE (Monica & Seth) Farm in Whiting, VT. After the making of the cheese, the rinds are periodically washed with a cloth dipped in a mordge (weak brine made from Twig Farm Cider, water, and salt) which encourages the growth of certain yeasts and bacteria which bring the distinctive pink-orange rind color and a bit of tasty stink! The cheeses will be about 1.4 pounds when they are ready to sell.

We will have Washed Rinds ready to ship on Monday, Dec. 21, 2020! You may reserve one now and then your entire order will ship on Monday, December 21, 2020.
