Twig Farm Washed Rind cheese is a semi-soft mixed (cow & goat) washed rind cheese. Washed Rind should be ready to sell towards the end of October. The cow’s milk (from cows on pasture and dry hay) is from MoSE (Monica & Seth) Farm in Whiting, VT. After the making of the cheese, the rinds are periodically washed with a cloth dipped in a morge (weak brine made from Twig Farm Cider, water, and salt) which encourages the growth of certain yeasts and bacteria which bring the distinctive pink-orange rind color and a bit of tasty stink! The cheeses will be about 1.4 pounds when they are ready to sell.
